HOW TO: CHICKEN & QUINOA SOUP

Over on Instagram I regularly post food photos but putting up recipes on More Than Adored is something I never really considered until an overwhelming amount of people expressed interest in seeing food posts. Soup is my favourite food ever so I thought I'd start off with something I adore and I know this doesn't look amazing but it tastes incredible. 

Ingredients                                Serves: 4                          Cooking time: 20 minutes 

Olive Oil 
1 Leek 
250g of Pumpkin, coarsely grated 
1 Carrot, coarsely grated 
3 cups of Chicken Stock 
1/2 cup of Quinoa, not cooked 
300g of Chicken Breast, roughly chopped 
1/2 a tablespoon of Ground Cumin (or more to taste)
1 cup of Wombok, shredded 
Parsley to garnish 

Method

Step 1: Heat saucepan over medium heat and add in the pumpkin, leek and a splash of olive oil. Cook until soft (about 3-4 minutes) 
Step 2: Add chicken stock and an additional 500ml of water. Bring to boil then lower the heat to low-medium. 
Step 3: Add chicken, quinoa and carrot. Leave uncovered to simmer away for about 10 minutes. 
Step 4: Add the ground cumin and cabbage and further cook until the cabbage is tender. 
Step 5: Garnish with parsley and pepper. Serve with delicious bread. 

This is a fantastic way to get kids eating vegetables that they wouldn't usually. Apart from the cabbage all the other vegetables are virtually undetectable so it's a great way to slip in some extra goodness. It's a basic soup but the cumin adds a lovely flavour and it's one of my favourites. As I post more food related content you'll realise that I'm a no fuss, healthy eater. I don't like things that take hours to make and I'm not a fan of foods that make you feel heavy or bloated.
