A chocolate mousse is a classic desert however it is on the unhealthy side and packed full of sugar. This quick an easy dairy-free chocolate mousse provides a delicious and healthy alternative for those of us who love a chocolate treat but want to still want to look good in them high waisted skinny jeans.

Ingredients
2 x 270ml Coconut Cream (chilled upside down over night)
1/3 cup raw cacao powder
1/3 cup chia seeds
2 tablespoons rice malt syrup
1 teaspoon vanilla essence
pinch of salt
Method
Place the chilled coconut cream and raw cacao powder into a bowl. Using a mixmaster or an electric beater whisk them together until they’re fluffy an well combined. The coconut cream doesn’t quite fluff up like normal cream but will still just about double in size.
Now add the rest of the ingredients an mix until well combined. More rice malt syrup can be added if you like a sweeter taste however I enjoy the rich taste of the cacao powder. When well combined spoon the mixture into the four medium ramekins and place into the fridge allowing to chill until firm. This usually takes around 3 hours.
Once firm you can sit back and enjoy. I recommend sharing this with your friends or family because its just to good to not be shared with the special people in your life!
