HEALTHY(ISH) BANANA MUFFINS

Snacks that aren’t full of crap are hard to come by or even think of, especially when you’re not used to snacking in a healthy fashion. Lately I’ve been experimenting with different snack ideas and this muffin recipe is delicious! It’s healthier then other muffins and taste amazing.. Promise!

Ingredients
2 cups of plain flour (I used wholemeal but that’s optional)
2 teaspoons of baking powder
2 teaspoons of baking soda
1 pinch of salt
3 brown bananas mashed
1/2 cup of extra virgin olive oil OR coconut oil - both work if using coconut oil it needs to be in liquid form for this recipe
1/2 cup of maple syrup
2/3 cup almond milk
2 teaspoons of vanilla extract
1 cup of pitted dates or approx 15, roughly chopped
1/3 cup of pumpkin seeds, roughly chopped

Method
1. Preheat your oven to 200 degrees and line 12 cup muffin tin with either baking paper or some spray oil.
2. Combine all the dry ingredients, so the flour, baking powder baking soda and salt, in a bowl. I didn’t sift the flour because I used wholemeal flour but you can if you would like.
3. In another bowl combine the oil, bananas, maple syrup, milk and vanilla extract.
4. Fold the flour through the wet mixture ensuring it’s all combined well.
5. Add the most of the pumpkin seeds, leave about a tablespoon out, and the dates into the mixture.
6. Divide the batter evenly among the muffin cups and sprinkle the extra pumpkin seeds on top.
7. Bake for approx 20-25 minutes or until the muffins are browned. Do the good old skewer trick if you’re unsure, it should come out pretty much clean when ready.
8. Store in air-tight container for 7 days or stock pile them in the freezer.
