It has taken me a little while to come back with another ‘What I Eat In A Day’ post and that is honestly because after the wedding I struggled with food.

For probably 10 months leading up to the wedding I had a meal plan and was fairly strict with my food. Isaac and I cooked separately therefore there was alot of control around what I was consuming. I was never unhappy or felt like I was doing anything extreme – because I wasn’t – but it meant it was very regimented. On the other side of the wedding I no longer felt like I had to be so strict but it’s taken me a little while to feel completely comfy with my eating habits again (after many months of TREAT YO SELF). Now I feel like I’ve found a happy middle ground of eating well, nourishing my body but not feeling guilty if we have noodles for dinner or if I have more then a teaspoon of peanut butter.

This is actually everything I ate yesterday apart from a coconut dark chocolate ball Isaac made however we are going to get a recipe of those up for you guys next week. Keep an eye out!

I wish I could get my big camera out and shoot a pretty flatlay for you guys but honestly even remembering to take a photo of breakfast, lunch and dinner is tough! I recently switched back to have smoothie bowls for breakfast from a homemade cereal blend mainly because it has warmed up but also because I was finding have a more carb heavy breakfast made me eat more during the day and wasn’t keeping me full for longer. This recipe is my fave because it’s super well balanced and thick! It also keep me full until lunch time which is exactly what I want from breakfast as I’m not much of a morning snacker.

Hands down my favourite recipe at the moment and one I could eat every single day. It leaves me so nourished and I absolutely love all the different textures and flavours in this macro bowl. We have alot of burrito/salad/macro bowls as they’re quick to make and you can balance them out really easily. Generally we have this for dinner however I always make extra servings for the next day as well (we made this Tuesday night and I had it for Wednesday lunch). All it is pretty self explanatory in the photo but my favourite is sautéing the kale and chinese broccoli with some lemon juice. SO GOOD.

This recipe is one from Kenko Kitchen and I HIGHLY recommend that book. It’s all plant based and also gluten free.

Excuse the horrid photo but Isaac loves ramen and it isn’t gluten free but fuck so do I! One of our favourite flavours we’ve discovered since going vegan (not that you can’t eat it if you eat other diets) is miso. It’s literally so bloody delicious! This is super easy recipe again from Kenko Kitchen that involved simply cooking ramen then adding tamari, edamame beans and sautéed mushrooms to that then topping with eggplant that you oven bake with miso painted on. It is so good and super easy to make!

Let me know if you guys liked seeing this or whether you prefer it just over on my stories!

I’m so lazy with my breakfast because I don’t have much time in the morning so I never end up making a smoothie or bowl or anything like that because there’s too much cleaning up, but I do like making my own granola because then you’ve got breakfast sorted for like two weeks and it only takes about an hour to do. That’s really interesting to hear that you found that a carby breakfast doesn’t work for you. I find when I just have fruit and yoghurt or something like that then I’m hungry really early, but I guess it’s a different story if you add a nut butter and extra protein in there somewhere.

I still have like a banana most morning but in terms grains and oats it just doesn’t seem to work for me! Obsessed with nut butters – YUM

It is a weird texture so I can understand why it’s not for everyone. I have had it stir fried before but I prefer it baked. Just marinade (I used soy sauce or tamari, lemon juice, peanut butter and a bit of chilli sauce) for about 15-20 mins and then chuck it in a moderate oven for about 20 mins.

Oh sweet! I might try that. I usually make ‘meatballs’ with it but never tried any super basic stuff like that!
